Food Files #16: Mexican Cuisine

Another cuisine which is familiar to the world is the Mexican cuisine. From tacos to enchiladas and nachos, Mexican influences in cooking can be found anywhere.  

The Mexican cuisine is known by Tex-Mex food, which is a blend of flavours and recipes from the Mexican, Texan and American culture. Today, we can find several different kinds of Mexican and American food including enchiladas, tacos and burritos.

The most common ingredient used in Mexican food is corn. Like the ancient civilisations that lived in the region, Mexicans have learned how to cook almost every meal with corn. Corn flour is the main component involved in the preparation of the Mexican food, and corn is also used in many forms for a wide variety of meals, including candy. The basic staples are native foods such as corn, beans and chili peppers. Chili is another typical ingredient used as a condiment several meals, and is the main component of the Tabasco Hot Sauce.

Nachos, tacos, tortillas, enchiladas, burritos, fajitas and quesadilla

Nachos is a Tex-Mex dish from northern Mexico. The dish is composed of tortilla chips covered with cheese or cheese-based sauce, and is often served as a snack. More elaborate versions add more ingredients and can be served as a main dish.

Tacos are traditional Mexican dishes composed of a corn or wheat tortilla folded or rolled around a filling. The filling could include either minced or shredded meat, chicken, pork, seafood or vegetables with salsa, avocado or guacamole, coriander, tomatoes, onions and lettuce.

Tortillas are soft, thin flatbread made from finely ground wheat flour. Originally derived from the corn tortilla, flour tortillas are commonly prepared with meat, mashed potatoes, cheese and other ingredients commonly used for fillings in tacos, quesadillas and burritos.

Enchiladas Mexican food

Enchiladas are corn tortilla rolled around a filling and covered with a chili pepper sauce. Enchiladas can be filled with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables, seafood or combinations.

Both Mexican and Tex-Mex food, burritos consist of a wheat flour tortilla wrapped or folded into a cylindrical shape to completely enclose the filling.  A classic burrito filling consists of cooked ground beef with taco seasonings, refried beans, shredded cheese, chopped tomatoes and onions and a healthy dose of salsa. The filling of burrito can consist of many things in accordance to the person’s preference.

An originally Californian innovation, a quesadilla is a wheat or corn tortilla filled with a savoury mixture, and/or vegetables, cooked often on a griddle, then folded in half to form a half-moon shape. The snack or comfort food is a palate pleaser for kids and adults alike. The ingredients of a quesadilla filling often includes cheese, a variety of vegetables like onions, tomatoes, peppers, mushrooms and some type of meat such as diced chicken or steak.

A term found in Tex-Mex cuisine, fajita commonly refers to any grilled meat usually served as a taco on a flour or corn tortilla. It includes chicken, pork, shrimp, and all cuts of beef, usually cooked with onions and bell peppers. Popular condiments are shredded lettuce, sour cream, guacamole, salsa, pico de gallo, cheese, and tomato.

Mexican foodOriginally a Spanish word meaning sauce, salsa is typically a word used to refer to sauces of the Mexican cuisine known as salsa picante, particularly those used as dips.

Created by Mexicans, guacamole is an avocado-based dip or salad. In addition to its use in modern Mexican cuisine it has also become part of American cuisine as a dip, condiment and salad ingredient.

    To bad not mencionate PALOMA located in intercontinental 12 years in doha representative the mexican and america cousine am not say is the best but the reputation and quality of food deserveved

    Im sorry but Chilis, Applebees, TGI’s, Rogers and Bennigans are all American restaurants and are not considered Mexican or Tex Mex.
    Just because Chilis sells chili, applebees sells churros and TGI’s sells a pasta that’s tex mex doesn’t make them Tex Mex. come on, do your research. Bennigans has nothing on the menu that’s Mexican. It even prides itself an American / Irish Pub.
