This week’s focus is delightedly back with homemade soup and in keeping with January’s good health theme, I share with you a real winner, the iconic LENTIL SPINACH SOUP.
Lentils are a superb source of protein and fibre plus being wonderfully low in fat which makes them an excellent healthy alternative for meat. They are also packed with the bodies goodies folate, iron, phosphorus and potassium. I like to add spinach (fresh or frozen) to my soup for an extra healthy touch and of course, fresh lemon juice gives the final soup a wonderful zesty flavour. The hot harissa paste I really love and this will provide a touch of additional spicy heat and piquancy. All in all, when these wonderful ingredients come together you can be assured to have a delicious soup.
