Spicy chicken wings

When it comes to simple party food, you cannot beat spicy chicken wings. These tasty morsels of chicken marinated in an unctuous spicy hot, buttery sauce and roasted until crisp are definitely ‘finger-lickin’ good’

Serves 6
Preparation: 10 minutes
Marinating time: 30 minutes
Cooking time: 45 – 60 minutes
Oven temperature: 180˚C

800 – 1kg fresh chicken wings

Hot Pepper Sauce

200g butter – melted
250ml hot pepper sauce – commercially prepared

Spicy Chicken Wings

Make hot sauce

Melt butter in a small pan, remove from the heat and mix with hot pepper sauce. Cool.

Assemble for marinating

Place chicken wings in a mixing bowl and pour over the peppery butter sauce. Leave to marinate for at least 30 minutes.

Tip into a large roasting tin and roast in a hot oven until crisp and golden. Remove when cooked and stack on an attractive serving plate, pouring any excess buttery pepper sauce into a small bowl for an extra dip.

Serve hot with extra sauce to dip and fresh parsley leaves.

Jules Tip: Tabasco sauce is too hot for this recipe, the best sauce to use is a milder hot pepper brand commercially sold in your favorite hypermarket.
