Yummy Banana Cake

A delicious banana sweet cake, full of flavour and banana goodness. This recipe was shared with me by the lovely New Zealand Mothers whom I met during my years ‘down under’. Wonderful ladies who always sought quick and easy recipes to home bake for their families. This cake is basically all made in one bowl so incredibly easy to make.

 

Serves 8 slices
Preparation time: 10 minutes
Cooking time: 45 minutes
Oven temperature: 180°C

Ingredients

Cake
4 medium ripe bananas
125ml coconut oil
3 eggs
265g brown sugar
2tsp vanilla paste
225g self-raising flour – sieved
1tsp ground cinnamon

Topping

1 medium ripe banana – sliced

Instructions

Prepare cake tin

Preheat oven to 180°C. Lightly grease a 22cm round baking tin and line the base with non-stick baking paper.

Make cake

Place the bananas in a bowl and mash with a fork. Add the oil, eggs, sugar and vanilla and beat to combine. Add the flour and cinnamon and mix well.

Bake

Pour into the prepared baking tin. Top with sliced raw banana. Cook for 45 minutes or until a skewer comes out clean.  Allow it to stand in the tin for 5 minutes before turning out onto a wire wrack to cool completely.

Jules Tips: I like to decorate this cake with extra banana slices on the top before baking but if you prefer do add chopped walnuts, almonds or pumpkin seeds. It is also possible to substitute with gluten-free flour or plain wheat flour with 2tsp baking powder. Naturally organic of course please, and easily available from within any supermarket store.
