Being a great believer in eating something ‘raw’ and ‘healthy’ in your daily diet at least once or twice a day, I share with you these two delicious recipes to enjoy either for yourself, with loved ones or with all the family. Both recipes are as always super easy to prepare, simple to follow and use fresh or raw ingredients.
In the first recipe I believe you will see my love for Mediterranean food shines through, as this recipe is very much a replica of the traditional healthy cooked greens the Greeks love to serve at any meal. I have tweaked the recipe as I live in the Middle East by bringing in the Arabic leafy green called Molakia, which also requires an interesting method of cooking to get the texture correct. If however, Molakia or Greek Spring Greens are not possible to find then please use Kale following the recipe instructions.
The second recipe is completely raw, offering a lovely combination of crunchy raw vegetables smothered in a creamy tasty dressing and if you are seeking ultra healthy, then this delicious dressing can be substituted with plain yoghurt for a lighter, lower fat version. I love this salad as it is literally a ‘throw in a bowl method’ which improves in flavour if left to mellow and infuse before eating.
Finally, if I may, I remind you all again to always try your best to add raw and healthy foods to your daily diets, and remember in the words of the revered ancient Greek philosopher and physician Hippocrates “Let food be thy medicine and medicine be thy food”
