On the first floor, right across the famous Tribeca Market in the iconic newcomer Waldorf Astoria Doha West Bay, you’ll find a hidden gem that offers a fusion of the rich flavours from the Silk Road with a modern twist. Underneath the blanket of stars, this outdoor oasis serves sharing-style mezze platters, one of their specialities.

Al Fayrouz Terrace presents a serene setting where you can also enjoy pleasurable sips of the finest beverages available and unwind with some of the best shisha flavours.

The Levantine journey at Al Fayrouz Terrace begins with homemade pita bread and three flavourful dips that are a perfect introduction to the rich and vibrant cuisine of the Levantine region. These dips include spicy labneh, date labneh, and muhamara.

The cold Mezze was all beautifully presented: fattoush with pomegranate molasses sorbet, tropical tabbouleh with tropical fruits and hummus with king prawn. Each of these is a traditional Middle Eastern dish with a contemporary twist.

Following the cold Mezze was the hot Mezze consisting of Al Fayrouz rolls with akkawi cheese and kibbeh enhanced with truffle oil and parmesan foam – a favourite flavour profile!

Another well-presented dish arrived – fried Shish Barak. This dish is a true representation of Levantine cuisine, with its delicate dumplings filled with flavourful meat and the creamy yogurt and aromatic coriander sauce, and toasted pine nuts complementing each bite.

The amiable restaurant supervisor, Shefa, recommended two signature mocktails to enhance the evening: ‘Hidden Oasis’, a blend of non-alcoholic dark rum, pineapple, lemon, and mint; and ‘Spicy Gem’, a concoction of Arabic spiced Fayrouz blend, clove cordial, lemon essence and basil.

As the evening drew to a close, Chef de Partie Moath Yousef arrived with a large bowl of Umm Ali. However, this was no ordinary Umm Ali; it was enhanced with orange blossom water. The aroma of the orange blossom water added a delicate and refreshing twist to the classic dessert, leaving a lingering fragrance in the air as we enjoyed our final bites of this indulgent treat.

The Levantine journey at Al Fayrouz Terrace in Waldorf Astoria Doha West Bay provides a delightful experience for diners, with its fusion of traditional Levantine flavours and modern culinary techniques.
