Raffles Doha is bringing in more award-winning and world-renowned chefs to their restaurants as part of an exclusive collaboration this February.

At Alba, diners are invited to an exciting Four-Hands culinary experience featuring Top Chef Middle East & North Africa winner Ali Ghzawi and Alba’s Head Chef Antonino D’Alessio. This collaboration promises a fusion of Middle Eastern and Italian flavours.

Ali Ghzawi is a renowned Jordanian chef, and the winner of Top Chef Middle East and North Africa 2019. Ghzawi discovered his passion for the art of food at the age of 17, and later transformed it into a career in worldwide five star hotels and gained experience in Michelin star restaurant Enoteca at the Hotel Arts Barcelona.

Chef Ghzawi now owns his own restaurants and travels around the world representing his country, Jordan, in many culinary and philanthropy events. His live cooking shows are broadcasted on TV across the region. He describes his culinary sense as ‘an authentic and simple yet sophisticated style’. He likes to use basic ingredients to create high-end dishes.

Meanwhile, Antonino D’Alessio, Head Chef at Alba by Enrico Crippa, began his culinary journey at the age of 16 at ‘Don Alfonso 1890,’ a two Michelin-starred restaurant. After graduating with honours from the renowned ALMA culinary school, he embarked on a global culinary adventure, working with Michelin-starred chefs in Italy, London, and France, where he worked alongside Chef Anne Sophie Pic at the Three-Michelin Star Maison Pic. In 2022, after working together with Enrico Crippa for four years at Piazza Duomo, destiny led him to the Middle East, where he now leads ‘Alba’ by Enrico Crippa at Raffles Doha — a testament to his passion, skill, and dedication to culinary excellence.

Guests can anticipate a fusion of textures, and aromas as the talented chefs present a thoughtfully crafted multi-course menu that reflects the richness of Italian and Middle Eastern gastronomy while pushing the boundaries of culinary innovation. Dishes include North to West Jordanian Layers  (Circassian dough, tuna nayyeh, beets, bulgur, vine leaves, bell pepper, molasses), Regno Delle Due Sicilie (ravioli with braised beef, raisin, pine nuts and parsley, tomato and beef jus), Halaweh Bel Chocolate and Sesame (chocolate, tahini, mint, baraziq, sesame, and orange blossom), and other delightful creations.

Guest Michelin-Star Chef Nicolas Isnard at L’Artisan

L’Artisan is also hosting another Michelin-starred chef, French Michelin-star chef Nicolas Isnard for a fusion of French flavours and avant-garde techniques. Options include a three-course business lunch, a four-course dinner, or a five-course Romance set menu.

Isnard draws inspiration from the Mediterranean flavours passed down by his Italian grandmother. After honing his skills in various kitchens around the globe, he took on the role of Chef de Partie at the one-star Michelin restaurant Le Prieure and later became the second chef at another one-star Michelin gem, Le Vieux Logis. His culinary journey continued at the two-star Michelin restaurant La Rotonde in Lyon, where he began experimenting with his own unique styles.

He then worked with three Michelin Star Chef Gilles Goujon at the Auberge du Vieux Puits and by 27, he became a chef at Château de Curzay, where he received his own Michelin Star. During this time, Nicolas fulfilled his dream of opening his own restaurant, Auberge de la Charme á Prenois. Specialising in French cuisine prepared with modern techniques, he received one Michelin star within a year’s time. Chef Goujon shared that cooking is his lifelong passion, desribes his cooking as ‘happy and flavoursome.’

Guests are invited to indulge in dishes such as Stuffed Squid ‘Bourguignon style’, Seared Duck Foie Gras, Signature Chef Isnard’s ‘Onion Soup’ and other delicacies.
