Chef Mohamed Alo, Executive Sous Chef at Al Najada Hotel Doha shares a simple Middle Eastern salad recipe you can try at home.

Chef Mohamed Alo - Executive Sous Chef al najadaIngredients:

  • fried leftover pita scraps
  • 40g Halloumi cheese
  • 20g black olives
  • 500g Romaine lettuce
  • 200g tomatoes
  • 100g onion
  • 250g cucumber
  • 5 medium radishes, stems removed, thinly sliced
  • a handful of mint leaves, roughly chopped
  • 2g thyme
  • 2g bakleh leaves
  • 1 tsp sumac powder
  • 5ml pomegranate molasses
  • 5ml fresh lemon juice
  • 1/3 cup extra virgin olive oil

Preparation:

  • Dice lettuce, tomatoes, spring onions and cucumber
  • Transfer vegetables into a mixing bowl. Add sliced radish with bakleh, thyme, mint, halloumi cheese and black olives
  • Sprinkle sumac powder, olive oil, lemon juice, pomegranate molasses and salt
  • Add fried pita scraps on top
