Chef de Cuisine, Chef Faouzi Aloui from Tunisia, with his extensive experience in banqueting and events brings a unique flavour to the culinary team of Marriott Marquis City Center Doha Hotel. Chef Faouzi has over 15 years of International experience in the culinary industry across various 5 star hotels and restaurants including Al Qasar and Mina A’Salam Madinat Jumeirah Hotel, Dubai and Shoo Fee Ma Fee, Dubai.

Chef Faouzi shares with you the recipe of his signature dish – Moroccan Lamb Mhammar (Lamb Shoulder).

Moroccan Lamb Mhammar (Lamb Shoulder)

Ingredients

  • 1.5kg boneless shoulder of Lamb
  • 40ml Olive oil
  • 15gm Ras el Hannout (Moroccan Mix Spices)
  • 40gm Peeled Garlic
  • 30gm Sweet Paprika
  • 25gm Cumin Powder
  • 15gm Black pepper
  • 20gm Ginger powder
  • 15gm Salt
  • 1gm Iranian Saffron
  • 4 Large Onions Finely Chopped

Preparation

  • Mix all the ingredients in large mixing bowl spread the mixture over the entire shoulder, place the lamb in a roasting pan add some lamb stock.
  • Cover the lamb shoulder with aluminum foil, sealing the edges tightly
  • Place the lamb inside the oven for slow cooking for 3 hours.
  • After 3 hours transfer the lamb to a plate, allow it to rest for 10 mins.
  • After 10 mins put it again in the oven for 8 mins, served with saffron Rice and grilled vegetables
