Apple Muesli Bars

 A delicious apple, honey, nut and dried fruit oat enriched muesli bar — full of natural goodness and flavours! The perfect accompaniment to any hot drink, and a great lunch box filler for all the family.

Cuts 12/14 small bars
Preparation time: 20 minutes
Cooking time: 30-40 minutes
Oven temperature: 190º C


Ingredients

175g unsalted butter
140g clear honey
250g soft brown sugar
2 medium apples – no need to peel, grated
350g porridge oats
1 tsp cinnamon powder
85g Brazil nuts – chopped
85g raisins
175g dried apricots – chopped
85g pumpkin seeds
50g sunflower seeds
50g sesame seeds


Instructions

Prepare baking tin

Lightly grease (butter or oil) a 23cm square tin, and line the base with baking paper (see image)

Make muesli bars

Melt butter and honey in a pan and then stir in the sugar.

Cook over low heat until sugar is dissolved.

Raise heat and bring to a boil and then boil 1-2 minutes, stirring all the time until thickened into a smooth caramel sauce.

Stir in the grated apple.

Mix together all the remaining ingredients into a large bowl and pour over the caramel apple sauce.

Mix well until all ingredients are well combined.

Spoon into the tin and press down well.

Bake

Place in the oven and bake until golden brown.

Cool and store

Allow cooling in the tin before turning out onto a board, ready to be cut. When cold store in an airtight container or freeze and defrost and enjoy when needed.

Jules Tips: This delicious fruity slice can also be made with a mashed-up raw banana – just omit the apple if you decide to do this. For this recipe, I used Brazil nuts but again you can use any nut of your choice such as almonds, pecan nuts or walnuts.
