Mustard Dill Prawns

It is very important to always try to eat or drink something nutritious, raw or health boosting in your daily diet. The recipe I share this week will please all seafood lovers and is for Mustard Dill Prawns. A delightful fresh prawn recipe where the prawns are infused in a mustard, garlic dill dressing. All very simple and absolutely delicious. Enjoy either as a starter, salad or snack.

Serves 6 | Preparation time: 20 minutes | Cooking time: None – just chilling
INGREDIENTS
450g fresh pre cooked prawns – either left whole or cut into bite size pieces
Mustard Dressing
- 150ml extra virgin olive oil
- 150ml walnut oil
- 1 large tsp Dijon mustard
- 1 lemon – juice
- 1 large garlic clove – crushed
- 2 tbsp chopped dill
- Pinch of sea salt
- Freshly ground black pepper
INSTRUCTIONS
1. Prepare prawns
Check clean with no black veins running though. Slice into bite sized pieces.
2. Make dressing
In a bowl mix combine extra virgin olive oil, walnut oil, lemon juice, garlic, mustard, sea salt and plenty of freshly ground black pepper.
Whip well with a fork until well blended.
3. Assemble
Gently mix in the prawns and dill.
Tip into a serving bowl, cover and leave refrigerated until required.
4. Serve!
Delicious with fresh lettuce leaves or with oven baked French bread slices.
JULES TIPS
I like to make this recipe using fresh pre cooked prawns but frozen, defrosted work well also. I recommend making this recipe a few hours ahead to allow all the flavours to infuse.
